I have lived most of my life in Orange County California and then moved to Georgia and fell in love with Southern culture! I guess I was born a southern beach girl by heart! Coconut Cake!

Yesterday, I made a coconut cake that turned out delicious! It was a two layer round yellow cake with hints of coconut. It had a cream cheese frosting that covered the whole thing and was then covered in shredded coconut on top of that! It was moist, sweet, and had a great amount of coconut flavor inside and out :) A simple design, compared to the other creations, but one of my favorites to bake!

The customer wrote me today and said: "Erica- Just wanted you to know that the cake was AWESOME!!! Very moist and rich! The birthday girl loved it! Thanks so much!!!!"

I love making smiles through my cakes ♥
